MICROWAVE WHITING FILLETS WITH CUCUMBER & TARRAGON SAUCE
(Serves 2-3)
Ingredients:
500g King George or silver whiting fillets
2 spring onions, finely sliced. Separate white from green.
1 tspn dill, finely chopped
½ cup white wine (or juice of ½ lemon and water)
1 tblspn butter or olive oil
1 tblspn tarragon, chopped
1 cucumber, peeled, seeded and diced
7 tblspn plain yogurt
Salt & Pepper to taste
Method:
In a pan soften green part of spring onions in oil.
Add cucumber and tarragon.
Simmer for 10 minutes.
Cool and puree coarsely.
Stir in yogurt, season with salt and pepper to taste.
Place fillets, white part of spring onions and dill in microwave
dish.
Pour wine over and sprinkle with salt and pepper.
Cover with plastic wrap and microwave on medium high for 5 minutes.
Serve with cucumber and tarragon sauce.
Cooking Tips & Alternatives:
Form a star shaped pattern putting thin end of fish in centre for
even cooking.
Other species that can be used for this recipe:
Cobbler, King Fish, Flathead, Perch, Hake, any other white fish
fillet.
