Yakitori Salmon with Udon Noodles (serves 4)

Ingredients:
450gms Tasmanian Salmon fillets
400gms fresh Udon or Hokkien noodles
2 cups of washed baby spinach
Tbsp light olive oil
3 tsp of toasted sesame seeds for garnish.
Marinade:
1/4 cup mirin or sherry
1/4 cup soy sauce
2 tsp Sesame Oil
Tsp of grated ginger.

Method:
Preheat the oven to 220°C.
Mix marinade & brush over Salmon.
Place onto baking dish lined with non-stick paper.
Bake for 8-10mins until opaque. Remove & break Salmon fillet
into chunks & set aside.
Wash noodles under water to separate & drain.
Heat oil in a wok or frypan & stir-fry noodles.
Add sesame seeds & pour in marinade.
Cook for 2mins longer.
Stir in spinach then cooked Salmon, mixing until spinach wilts.
Serve in bowls garnished with extra toasted sesame seeds.
