Tasmanian Salmon With Tomatoes, Capers & Olives Served With Potato
Gnocchi & Parmesan (serves 4)

Ingredients:
4 x 125gms Tasmanian Salmon fillets
500gms prepared Gnocchi
250gms cherry or tear drop yellow tomatoes cut in half
2 tbsp capers, drained
2 tbsp roughly chopped black Kalamata olives
2 tbsp extra virgin olive oil
Tbsp freshly grated Parmesan
Salt & ground black pepper

Method:
Pre-heat the oven to 180°C.
Place Salmon into a shallow baking dish.
Scatter over tomatoes, capers, olives & drizzle over Olive
Oil.
Season with salt & pepper.
Bake Salmon for 20-30mins until cooked.
Cook gnocchi.
Mix some of the tomatoes & capers through cooked gnocchi.
Serve Salmon & gnocchi with grated fresh Parmesan cheese.
