Pasta Shells With Smoked Tasmanian Salmon, Feta & Roast Sweet
Potato (serves 4)

Ingredients:
175gms Smoked Tasmanian Salmon, torn or roughly
chopped
2 medium sweet potatoes washed & cut into small chunks
1 red onion, peeled & roughly chopped
4 tbsp extra virgin olive oil
2 tsp thin strips of lemon zest
Salt & pepper
2 tbsp chopped Italian parsley
100gms feta, finely chopped
400gms Gnocchi shell pasta

Method:
Pre-heat the oven to 200°C.
Place sweet potato & onion in a shallow baking tray, mix in
oil & lemon zest.
Bake for 20-30mins until tender & light brown.
Meanwhile cook pasta in a large saucepan of salted boiling water
for 11mins or until al dente.
Drain & stir through diced Salmon, feta & parsley.
Season with salt & pepper.
Remove roasted potato & onions from oven & stir into pasta
making sure all the roasting oil is mixed through.
Serve immediately.
