Grilled Teriyaki Tasmanian Salmon Skewers with Stir-Fried Carrot &
Red Pepper (serves 4)

Ingredients:
400gms Tasmanian Salmon fillets, skinned &
cut into 24 cubes
1/4 cup teriyaki sauce
8 wooden skewers soaked in hot water for 10mins
Tsp sesame oil
Tbsp light olive oil for cooking
1 large carrot, peeled & cut into strips
1 small red pepper, deseeded & cut into strips
Green onion tops for garnish

Method:
Skewer three Salmon chunks & brush with teriyaki sauce.
Pre-heat a chargrill plate & lightly oil grill.
Cook Salmon for 2-3mins each side, turning frequently until opaque.
Heat fry pan or wok & stir-fry vegetables with sesame &
light olive oil.
Stir in teriyaki sauce & cook until vegetables wilt.
Serve Salmon skewers with vegetables & plain boiled rice.
Top with onion tops.
