Garlic Prawns & Portobello Mushrooms
Cooking Time: 5 Mins - Serves 4

Ingredients:
500g Seafood Secrets Local Prawn Meat
1 Head of Local Garlic peeled
1 Red Chilli chopped
¼ Bunch Parsley Chopped
¼ Packet Oregano Chopped
200ml Njoi Olive oil
Sea Salt
Pepper
1 Lemon
4 Large Portobello Mushrooms
100g Butter

Method:
1) Buy a Packet of Local Prawn meat from Seafood Secrets
2) Chop up Garlic, chilli, parsley and oregano
3) Wedge Mushrooms
4) Marinate prawns in Olive Oil
5) Heat Pan till just before smoking
6) Add prawns cook for 30 seconds and add garlic and chilli
7) Add Mushrooms and butter cook for a further 2mins
8) Season with salt and Pepper
9) Add fresh herbs
10) Serve with steamed rice with lemon wedge
Chefs Tips:
1) When adding garlic and chilli be careful not to burn
2) Mushrooms and Prawns are great with a Wooded Chardonnay
3) When defrosting whole uncooked prawns do it quickly in cold water
