Down South Marron with Green Mango (Serves 1 - 2 )
Ingredients:
1 whole marron, decent size
2 small fresh chillies
1 stalk coriander chopped
1 spring onion
2 shallots finely sliced
1 handful of Thai basil
1 stalk of lemon grass finely sliced
A few mint leaves
Half a green mango, peeled & sliced
Dressing:
1 tbsp chilli jam
1 tbsp fish sauce
1.5 tbsp castor sugar
Juice of one lime
Method:
Slice the marron in half and grill, be careful not to over cook.
Combine all dressing ingredients in a large bowl.
Add the chilli, shallots, spring onion & herbs to the dressing
and then the sliced mango.
Arrange the marron on a large plate and spoon the dressing over
the top.
Garnish with a few extra mint leaves.
Note:
If you prefer the subtle flavours of the marron to really come
through then just steam or boil marron and eat as is with a pinch
of salt.
This dressing can be used for other fish and seafood especially
squid and cuttlefish.
