Don's Five Minute Chilli Mussels (Serves approx. 6)
Ingredients:
2 Kg cleaned de-bearded mussels
1 onion cut in half and sliced fine
2 cloves garlic crushed
1 teaspoon hot chilli ( Hogan's great)
1 x 500 gram tin peeled tomatoes - rough chopped and juice
1 good slurp Leeuwin Estate Riesling
1 lemon - quartered
4 spring onions - thinly sliced
1 teaspoon njoi Extra Virgin Olive Oil
Method:
1. Heat saucepan with tight fitting lid on medium heat.
2. Add oil, onions, garlic and chilli - cook for one minute.
3. Add mussels, white wine, replace lid, cook two minutes on high
heat.
4. Add tomato, including juice and lemon, stir mussels around to
promote even cooking, replace lid, cook two minutes on high heat.
5. Add spring onions.
6. When shells are open mussels are ready - serve in large bowl
with finger bowls.
Handy Hints:
To give a clean and healthy zing add a little lemon grass and ginger.
Discard any unopened shells.
Mussels need little cooking
