Classic West Australian Garlic Prawns (Serves 4)
Ingredients:
1 onion finely chopped
20 peeled green King Prawn cutlets
1 tbsp fresh garlic - chopped
2 tbspn olive oil
200ml pouring cream
2 spring onions finely sliced
50ml good splash of Sauvignon Blanc or Riesling
1/2 lemon - for garnish
Seasoning
Method
1. Devein prawns, leave tail on
2. Heat oil up to medium heat in fry pan
3. Cook onions off without colouring
4. Add prawns, cook 1 side, turn & season
5. Add garlic, cook without colour
6. Add wine, de glaze pan
7. Add cream, reduce a little
8. Add spring onion for colour
Service:
Arrange prawns over steaming rice pilaff. Spoon garlic cream sauce
over. Garnish with lemon and dill. Serve hot.
