Albany Oyster Singer
Method:
Peel some fresh young ginger and finely grate.
Put the grated ginger and juice into a bowl.
Add 2 tsp sugar, a good splash of sweet chilli sauce, a squeeze
of lemon juice, a drizzle of njoi extra virgin olive oil, a splash
of rice wine vinegar
Spoon the dressing over some freshly shucked sweet Albany oysters
Sprinkle with some finely shredded coriander leaves and season with
pepper.
Stand 10 minutes to allow the flavours to develop and serve.
Enjoy with a glass of bubbles or a wonderful Great Southern Riesling.
