STIR-FRIED LOBSTER HORN MEAT WITH CHINESE BROCCOLI
AND OYSTER SAUCE

Ingredients for 4 as a starter:
400 grams lobster horn meat
2 bunches chinese broccoli (Kai Lan)
2 cloves garlic, finely chopped
1 tablespoon sunflower oil
SAUCE INGREDIENTS:
90 ml chicken stock
60 ml oyster sauce
25 ml chinese rice wine
1 teaspoon sugar
1 teaspoon soy sauce

TO FINISH:
1 knob fresh ginger, cut into fine strips
a little sesame oil
METHOD:
Bring a steaming pan to the boil, wash chinese broccoli well and
cut into 10 cm lengths.
Place chinese broccoli into steamer basket and fit onto steam pan,
cook for approximately 3 minutes.
Mix all sauce ingredients together.
Heat wok, add a dash of sunflower oil and cook garlic until it
is translucent. Add chinese broccoli and lobster horn meat, toss
over heat, then add sauce ingredients and stir fry until sauce is
correct consistency and coats the chinese broccoli.
Serve immediately garnished with fresh ginger and a dash of sesame
oil. Great with a cool, crisp beer.
