PIZZA OF LOBSTER HORN MEAT, CHILLI, BASIL AND BOCCONCINI

Ingredients for 4 as a light meal:

400 grams lobster horn meat
600 grams pizza dough
300 ml good tomato sugo
320 grams bocconcini cheese
1-2 sliced fresh chillies according to taste
few sprigs fresh basil
extra virgin olive oil for drizzling
sea salt and freshly ground pepper

METHOD

Pre-heat oven to 240°C.

Divide pizza dough into four even sized portions.

Roll out to approximately 18cm rounds, lay onto pizza trays, keep warm.

Allow dough to rise for approximately 30 minutes.

Spread dough with tomato sugo, dot with lobster horn meat, bocconcini and sprinkle with chilli to taste. Season with salt and pepper.

Bake for approximately 6 minutes, until dough is golden brown. Remove from oven, sprinkle with torn basil leaves and drizzle with olive oil.

Slice and serve immediately, with a glass of Italian Soave or Australian Pinot Gris.
