ANGEL HAIR PASTA TOSSED WITH LOBSTER LEG MEAT,
CHILLI, TOMATO, OREGANO AND EXTRA VIRGIN OLIVE OIL

Ingredients for 4 as a starter:
250 grams lobster leg meat
60 ml extra virgin olive oil
2 cloves fresh garlic, finely minced
160 grams fresh tomato, finely diced
2 red chillies, de-seeded and finely diced
100 ml pouring cream
280 grams fresh angel hair pasta
2 tablespoons freshly picked oregano
sea salt and freshly ground pepper

METHOD
Pour olive oil into a large heavy frypan.
Add garlic, chilli and tomato, cook over medium heat
for 1 minute.
Increase heat, add cream and lobster leg meat, tossing
lobster leg meat so that it cooks evenly. Cook a further 2 minutes.
Drop angel hair pasta into boiling water, cook to
al dente, strain and place into pan with lobster leg meat.
Sprinkle in oregano, toss and season.
Serve immediately into 4 pasta plates with a glass
of Viognier.
