Seafood Secrets Recipes - Andrew Embley

Chilli Mussels

Cooking Time: 25 min - Serves 4-6

Ingredients:

2kg Mussels

Sauce:
50ml Oil
2 x Onions, diced
4 x Chillis, diced
1 x Tablespoon Crushed Garlic
100ml Red Wine
100g Tomato Paste
1 Litre Crushed Tomatos
100ml Water
100ml Sweet Chilli Sauce
Big pinch of Cajun

Andrew Embley's Chilli Mussels

Method:
1) Add oil to the pan and wait until very hot.
2) Add onions and fry until they are transparent.
3) Add garlic and chilli and sauté for 3-4 minutes.
4) Add red wine and let the sauce reduce. Once reduced add tomato paste.
5) Turn the heat down cook for 5 minutes.
6) Add remaining ingredients and let simmer for 20 minutes.
7) Add your pre boiled mussels
